Low-Carb Keto Pizza – Almond Flour and Psyllium [Jan 2018]

It was almost 3 years ago when I posted a recipe for a pizza that was in line with the ketogenic diet. I wasn’t too precise with the nutritional information though. In fact, I didn’t specify any info for that matter.

So, in this post I’m going to try to be more precise. I’ve been doing this pizza every now and then and it basically has the same ingredients. In the near future I’m going to try new flour combinations for the crust. Until then…

For The Crust

130g almound flour (or ground almonds)
15g psyllium husk
10g baking powder
3 whole eggs
salt to taste

For the Topping

50g tomato sauce/paste/puree
40g green olives
40g saussage
25g cheese

You could be more liberal with the quantities for the topping. I tried to be conservative as I wanted to have the entire pizza in 2-3 servings.

Steps

  1. Mix the dry ingredients (almond flour, psyllium, baking powder, salt). Beat the eggs and add them to the dry ingredients. Mix until you get a homogenous combo.
  2. Spread the crust onto the pan lined with parchment paper. Spread the tomato puree onto the crust. Add the olives, the sausage and the cheese.
  3. Bake it in the preheated oven for 30-40 minutes.

Notes and Nutritional Information

The recipe yielded about 480 grams of pizza. Here is the macronutrient breakdown (for 480 grams):

Energy: 1321 kcals
Fat: 109.4 grams (20.5g saturated, 62.3g monounsat., 22.9g polyunsat, 659mg cholesterol)
Protein: 64.4 grams
Total Carbohydrates: 45.9 grams
Dietary Fiber: 28.6 grams
Sugars: 8.8 grams
Net Carbohydrates: 17.3 grams

I had it in 3 equal servings of 160g each. The numbers per serving are:

Energy: 440.4 kcals
Fat: 36.5 grams (6.8g saturated, 20.8g monounsat., 7.6g polyunsat, 219.8mg cholesterol)
Protein: 21.5 grams
Total Carbohydrates: 15.3 grams
Dietary Fiber: 9.5 grams
Sugars: 2.9 grams
Net Carbohydrates: 5.8 grams

What I like most about this recipe is that you need about 10-15 minutes for preparation and another half an hour to bake it, so it’s fast and convenient.
